Breakfast / Snack

Breakfast parfait: berry chia coulis with probiotic nut-based cream, nuts & seeds crumbs in mason jars

Crudités & dips: Seasonal vegetable platter with a choice of 2 home-made dips: muhammara, hummus, baba ganoush, labneh

 

Kamut apple muffins: organic Kamut flour, maple syrup and mixed berries

Salad

Kale, fennel, roasted pecan, peaches/apple/pear with white balsamic dressing: massaged kale with shaved fennel and roasted pecan.

 

Greek salad; Heirloom tomatoes, and cucumbers from local organic farms, sheep feta

 

Farro salad: Farro, arugula, roasted sweet potato, apple, roasted nuts, herbs with almond butter dressing

Main dishes

Tofu parmigiana: home-made tomato sauce, spelt-breaded tofu, mozzarella or cashew cream

 

Sautéed cashew, broccoli and choice of tempeh, crispy tofu or shrimp with spicy tamari sauce

 

Farro mushroom risotto: farro, cremini mushrooms, shallot, green peas, soy cream

 

Coconut green or red curry: curry with crispy tofu or shrimps, colourful vegetables, Thai basil, lime leaf and cilantro. Served with fragrant rice.

 

Roasted salmon: choice of cashew cream sauce, tamari & ginger sauce, mustard & orange glaze, or tartar sauce

 

Honey garlic shrimp or crispy tofu: tamari based garlic sauce with sautéed colourful vegetables, served with brown or multi grain rice.

 

No-potato fish cakes: choice of salmon, cod or sardine. Served with tartar sauce.

Avocado ranch wrap: quinoa, black beans or lentils, spiced mushrooms, romaine, cilantro, pickled jalapeños, cheese

Dessert

Maya's chocolate chip cookies: coconut sugar sweetened dark chocolate chip cookies
